What do you guys do fitness wise during the week?

Take a look at the Sticky: PRMC fitness schedule guide at the top of this forum. Thats what I use and it seems to work well.

Well if you don't like it you could use the basic principle of it and change it to suit yourself like for example it tells you to run 15 mins steady pace some evenings and sometimes cycle in the evenings for 35 mins. Well instead of that I run 1.5 miles first thing in the morning and it only takes 9.5 minutes. Personally I think you should concentrate on running a fixed distance rather than running for an appointed length of time, because down at Lympstone they dont say "run there for 22.5 mins and we'll see how far you get" You have to run the 3 miles in 22.5 mins. Train for the event.

basically i do press ups, pull ups, sit ups weights everynight, sometimes twice a day if i goto the gym, a run or bike ride everyday, started to bike ride everywhere i go unless its unappropriate...
my rest days are usually saturday and sunday maybe with a simple cycle or jog for anti-bordem reason...

Yes, just let me say this please.
Get a speedometer for your bike, they also record distance and only cost about £5 from a bike shop, and cycle the circuit.

if your young and have more than a year before you are attempting to join up you may as well join a running club, its more fun than running billy no mates as theres a croud of you and you progress so more quicky (my 3 mile time went from a struggling 21 mins to 18 mins easily in just 6 months). With the training 2 nights at the club you do your upper body workout and your sorted.
